Christmas Food

This is another late one and another horrible picture post, but you get the idea!


Snowman Bagel.....bagel with cream cheese, chocolate chips for eyes, crasins for mouth, baby carrot for nose, and a spinach tortilla for the scarf!


Santa pancake....pancake for face, banana and chocolate chips for eyes, can of strawberry pie filling for hat and nose, and whipped cream for beard and hat! (She thought this was the greatest thing on earth!)


Santa Belly Pizza....I just used pepperoni for the red on top of the cheese, black olives for the belt, and strips of yellow bell pepper for the buckle. 


Brownie sled....brownie with 2 mini candy canes for the sled!



Snowman donuts....Powdered donuts with candy corn for the nose and mini chocolate chips for the eyes and mouth.


Snowman pancakes.....a small and larger pancake with chocolate chips for the eyes, mouth, and buttons. Candy corn for the nose, and bacon for the scarf! 


Halloween Food

I am just now posting this because I just found the pictures. They are horrible quality pictures from my phone, but you get the idea!



This was the dinner I made for my niece. Frankenstein was a quesadilla made with spinach tortillas. For his face I used black olives and sour cream. The soup was tomato bisque. I put sour cream in a small zip lock bag and piped on the soup to look like a spider web. I then created a black olive to look like a spider. The way I made the ghost drink was by freezing the glass, then using magic shell, then refreezing, and adding milk. 


These are supposed be mini caramel apples. Hint: don't put them above your dishwasher that is on hi-temp setting and drying because it will never stick!! They sure tasted great though. 

Protein Pancakes

Let me start out by saying in NO WAY do these pancakes come close to IHOP's pancakes. So if you are thinking about making these and think they will taste like pancakes you will be disappointed. However, if you are looking for a healthy breakfast to start your day that will satisfy your craving for a sweet breakfast, this is it!

1/2 cup of cooked oatmeal (I used this multigrain hot cereal instead)
1/2 scoop of protein powder (I used a plain powder)
4 egg whites
dash of cinnamon
rasins (optional)
pecans (optional)

Mix all ingredients together in a bowl until well blended. Cook on the stove top like you would a regular pancake.

I added pure maple syrup to mine. I had 2 small ones and they filled me up for hours!

Clean Breakfast Tostada

This morning at 8:15 I decided I wanted something filling for breakfast. Something more than oatmeal or yogurt. I have to be logged into my computer by 8:30 so I only had 15 minutes to get this done! I bought quite a few avocados recently that I needed to use up so I decided on something Mexican. I have these yummy clean (for the most part...no sugar or white flour) corn tortillas so I decided to go for a tostada.



Once again a picture with my phone. Ever since I moved my office upstairs 
I either don't have my camera or if I do the card is plugged into the 
back of my computer. Normally I am in such a hurry to cook 
it and eat it that I gotta do what's available! 


Clean Breakfast Tostada
1 clean tortilla
2 Jennie-O Turkey Sausage Links with the casing removed
1 egg
1/8 cup shredded low fat cheese (I went with colby jack)
1/4 avocado sliced
1 tablespoon of greek yogurt (optional)
1 tablespoon of clean salsa (optional)
salt to taste

I fried my egg in a nonstick skillet with no oil. You can could your egg however you choose. While the egg was cooking I chopped up the sausage and cooked that in a nonstick skillet on med-high heat until it was cooked all the way through. I then placed the egg on top of the tortilla in a nonstick skillet on med-low. On top of the egg I added the cheese, cooked sausage, and avocado and cooked until cheese was melted. Once I removed it from the pan I added the salsa and greek yogurt.

This was a very filling breakfast. As far as the turkey sausage goes....I used the links with the casing removed because 1. I can never find this. 2. I like the portion control of it!

Clean 7 Layer Dip

I took it with my phone on my lunch break and had to hurry!
Oh well, you get the idea!


Tonight is my turn to bring snacks to my discipleship group. I really wanted to go with something clean since I am doing so well right now with it and I am on a roll. I decided to make clean 7 layer dip. 

Clean 7 Layer Dip

Layer 1- Smashed Black Beans
1 can of organic black beans
1/4 cup of water
1 tablespoon of garlic powder
1 tablespoon of cumin
1 teaspoon of chili powder

Rinse and drain black beans. Add black beans and all other ingredients to a food processor. Mix until smooth.  Add black beans to your dish as your first layer.

Layer 2- Guacamole
2 avocados
1/4 cup of minced cilantro
2 minced garlic cloves
salt to taste

Peel and seed avocado. Add all ingredients to a food processor and mix until smooth. Layer on top of the black beans.

Layer 3- Greek Yogurt
1 cup of fat free Greek yogurt

Add layer of Greek yogurt to the Guac.

Layer 4- Salsa or diced tomatoes
3/4 cup of clean salsa or diced tomatoes

Add on top of the layer of Greek yogurt. ( I buy my clean salsa at Trader Joes, but here is a recipe)

Layer 5-Lettuce
Shredded lettuce

I used shredded baby spinach, but any lettuce is clean! Add this on top of the salsa or tomatoes.

Layer 6- Cheese
1/4 cup of shredded low fat colby jack cheese

Add to layer to the shredded lettuce.

Layer 7- Black Olives
One can of dice black olives

Drain black olives and sprinkle on top of cheese. ( I left these out since one member of my small group doesn't like them!)
