Christmas Food

Christmas is one of my favorite times of the year. I love all the lights, decor, and themed food! What's not to love! Here are a few things I made last season.....pictures are horrible!

This is tortellini with some pesto and tomatoes. I called it Christmas pasta!


Cheese and Meat Tray....pepper jack, colby jack, munster, cheddar, tomatoes, capicola, prosciutto, rosemary, and a little yellow pepper star! 

 Santa Pancake.....whipped cream, can of strawberry pie filling, 2 banana slices, and 2 chocolate chips

Santa belly pizza.....pepperoni, black olives, and yellow peppers

Red velvet brownies cut like Christmas trees with green sprinkles

Santa Bagel.....bagel thin, cream cheese, mini chocolate chips, 
chocolate chips, baby carrot, 
spinach wrap, and crasins

I have been making these for years....WAY before Pinterest ;) Grape tomatoes, 
fresh mozzerella balls, fresh basil, balsamic vinegar, olive oil, and kosher salt on a tooth pick


Reindeer buckeyes....buckeyes, pretzels, red gel icing, mini chocolate chips

Chicken roll tree....chicken salad made with cream cheese and cheddar, 
spinach wraps, and bell peppers.

Mickey Mouse Party

One of my best friends little boy turned 2 over the weekend. They live in Arkansas and I was not going to be able to go and that always makes Lala VERY sad! I helped her with the writing for the invitations and some little print outs as well as some thank you tags. We ended up going to Arkansas for an unexpected death in my husband's family so I was able to stop by the party.  Here are a few pictures I got (not many)

Little Mermaid Theme Night

Theme nights are a Lala specialty! I LOVE to do them!! This one is from last spring but I figured I would go ahead and post it. Warning....these pictures are horrible.  Also, a lot of food coloring was used in this theme night. I know it's not good for kids, but once in a while during a theme night isn't going to kill them. Probably better for them than half the stuff on the shelves that is "healthy for kids"!

We had lots of Little Mermaid themed food, watched Little Mermaid about 15 times, and made a Little Mermaid out of nature.



Breakfast.....A Little Mermaid Pancake. I mixed three different bowls of pancake batter. One red, one green, and one normal. I added them to ziplock bags and cut off the corner to make it like a pastry bag. I had to work fast! Little Mermaid has blueberry boobies and is sitting on a blueberry boulder pile!!


Lunch.....Little Mermaid Sandwich. Tomato hair and boobies, monterey jack cheese body, and avocado tail!


Dinner....Little Mermaid Pasta. Mac and cheese with food coloring and spaghetti hair with food coloring.


Little Mermaid on the driveway. Rock body outline, purple boobies made of flowers, orange leaves for hair, green leaves for a tail, and pink rose petals for lips! She LOVED helping design this, find the stuff, and put it all together!

Puss in Boots Theme Night

My niece, Emily, and I love to have theme nights. This is just a Lala kind of thing to do! Normally I pick a movie and then I create our food based on the movie. Well, Puss in Boots was playing at the park last weekend so I decided I was going to take her. (We ended up getting rained out, so we bought it at home and watched it THREE times!!) I have never seen Puss in Boots, so this was going to be a challenge. I watched a couple of trailers of it on youtube and came up with my menu.

Magic Beans....they have these green magic beens in the movie that grow a bean stock. They are in constant search for these beans. They are just little green beans that look like jelly beans so I went with Edamame! She loved it!

Golden Eggs....the reason Puss is looking for the magic beans to grow a bean stock is to get to the castle in the sky that has a goose that lays golden eggs. For this I did hard boiled eggs, peeled them, and then let them sit in cold water that I had dyed yellow. They became golden!! I also wrapped a plastic egg with a toy in it in tinfoil and spray painted it gold as a surprise during the movie when they finally found the goose!

Holy Frijoles...Puss says holy frijoles several times throughout the movie. So I made holy frijoles dip. This was just chips with refried black beans. 


Golden Coins....several times in the movie Puss had golden coins. So I bought some chocolate gold coins at Cost Plus World Market for dessert. 

She loved all of this!! It was super easy too. I love making movie night extra special for her. 


Of course you can't watch Puss in Boots without your own personal one!! (This is my baby, Paisley)

Christmas Food

This is another late one and another horrible picture post, but you get the idea!


Snowman Bagel.....bagel with cream cheese, chocolate chips for eyes, crasins for mouth, baby carrot for nose, and a spinach tortilla for the scarf!


Santa pancake....pancake for face, banana and chocolate chips for eyes, can of strawberry pie filling for hat and nose, and whipped cream for beard and hat! (She thought this was the greatest thing on earth!)


Santa Belly Pizza....I just used pepperoni for the red on top of the cheese, black olives for the belt, and strips of yellow bell pepper for the buckle. 


Brownie sled....brownie with 2 mini candy canes for the sled!



Snowman donuts....Powdered donuts with candy corn for the nose and mini chocolate chips for the eyes and mouth.


Snowman pancakes.....a small and larger pancake with chocolate chips for the eyes, mouth, and buttons. Candy corn for the nose, and bacon for the scarf! 


Halloween Food

I am just now posting this because I just found the pictures. They are horrible quality pictures from my phone, but you get the idea!



This was the dinner I made for my niece. Frankenstein was a quesadilla made with spinach tortillas. For his face I used black olives and sour cream. The soup was tomato bisque. I put sour cream in a small zip lock bag and piped on the soup to look like a spider web. I then created a black olive to look like a spider. The way I made the ghost drink was by freezing the glass, then using magic shell, then refreezing, and adding milk. 


These are supposed be mini caramel apples. Hint: don't put them above your dishwasher that is on hi-temp setting and drying because it will never stick!! They sure tasted great though.

Easter Table Decorations


I love Easter decorations! I love all the colors and the signs of spring. This year we had Easter lunch at my house. My sister and her family came along with my mother from Arkansas. I wanted the table to look extra special without having to break the bank.

My main dishes are white so those were an easy choice for Easter. I only have one set of placemats and they are red. I only have one set of napkins and napkin rings and they are both black. That was NOT going to work for Easter. So I had to get creative.

About a year ago my dog, Buster, chewed a little whole in one of my pillow covers. I just recently got a new one to replace it and since it was a buttercream yellow I thought it would be perfect for the Easter table.....but where?

I knew I wanted it to be a sort of country looking table, not modern. So, I cut out strips of the yellow pillow cover about 1 inch wide and 6 inches long. I took plain white paper towels to wrap the silverware and then just tied the pillow cover strips around them. The pillow covers were made of a thick linen like material so it worked out perfect. They were frayed a little bit, but I liked it. It gave it that country look I was going for.



Now what was I going to do for the place mats? Well I went to the grocery store and bought 2 rolls of cork drawer liners. The rolls I bought were only $3 a piece and I made 3 placemats out of each roll bringing them to a total of $1 each! They worked out perfect with the look I was going for!



Next was the decor. I have a ton of mason jars laying around the house as well as a roll of jute twine. That is typically my go to vase of choice when I am making a flower arrangement. Today I wanted to spice it up a little. So, I took some more of the pillow cover fabric and wrapped it around the vase and added the juste twine around that. I have a huge snowball tree in my front yard so I thought those would be perfect. I bought 6 tulips at the store for $5 to add a little more color to the table.


The menu...I normally don't do this! I had seen Easter Brunch Menus all over the place in the last couple of weeks so I decided to do my own. This was the fun part! I love turning ordinary food into something that sounds amazing! (Isn't that what the restaurants do?) Like for instance The Creamy Mushrooms with Hericot Verts topped with fried onion strings and cheddar cheese...that is just my recipe for a green bean casserole. Yes, it's not your typical casserole, but it's also not very fancy either! Change the words green beans to the French translation, make French's Fried onions sound way more appetizing and VOILA!, you have a fancy menu! Adjictives are your friends as well! Easter Menu


I always put together a menu for holidays. I never make it sound fancy and print it out though. Since my mom was coming to town I wanted to do something extra special. So I turned my ordinary menu into something that sounded rather fancy. (that's what the restaurants do too!)

Savory Garlic Deviled Eggs

1 dozen large eggs
1/3 cup Miracle Whip
1 tbsp of garlic salt with parsley

Hard boil all of your eggs. Put them in a bath of ice water until they are completely cooled. Slice them in half lengthwise. Remove the yolk and place in a medium bowl. Add the Miracle Whip and garlic salt to the egg yolks and stir until creamy. (I normally leave a few small chunks) Using a tablespoon, add the yolk mixture back to the egg whites and serve chilled.

Nothing fancy about these! Adding the word savory and garlic to them helps jazz them up a bit!!



Caramelized Peach Glazed Ham

3lb Fully cooked hickory smoked ham
1 can of peaches in heavy syrup
1 cup of brown sugar
2 tablespoons of sherry

Drain the peaches reserving the heavy syrup. Get rid of the peaches. Don't throw them away, just use them for something else. In a small bowl add the peach syrup, brown sugar, and sherry. Mix and let sit for an hour.

Follow the instructions on heating your ham on the label. I had never cooked a ham before. All I did was turn the oven on 350, wrapped the ham in tinfoil with the glaze on top for 12 minutes per pound. When it was done, I removed the ham and poured the glaze that ran off back on top of the ham.

Since I used brown sugar in the glaze I used the word caramelized to describe it, making it sound way fancier than it was!!!



Sweet Potato Souffle topped with a Pecan Struesel
This is a Paula Deen Recipe. All I do is add uncooked oatmeal to the streusel


Ingredients

Souffle:

  • 3 cups cooked and mashed sweet potatoes, from about 2 to 3 small baked potatoes
  • 1 cup granulated sugar
  • 3 eggs, beaten
  • 1/2 cup milk
  • 8 tablespoons unsalted butter, about 1 stick, melted
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt

Topping:

  • 1 cup packed light brown sugar
  • 4 tablespoons unsalted butter, about 1/2 stick, cubed, at room temperature
  • 1/2 cup self-rising cake flour
  • 1 cup chopped pecans

Directions

Souffle: Preheat the oven to 400 degrees F. Lightly grease an 8-inch square baking dish.
In a large bowl, combine the sweet potatoes, sugar, eggs, milk, butter, vanilla, and salt. Pour the mixture into the prepared baking dish.
Topping: Combine the brown sugar, butter, flour, and pecans in a separate bowl. Crumble the topping over the sweet potato mixture.
Bake for 20 to 25 minutes, until the topping is golden brown. Serve hot.



Creamy Mushrooms and Hericot Verts topped with Fried Onion Strings and Cheddar Cheese

1/3 stick of butter
1/2 cup diced onions
2 grated garlic cloves
1 cup of sliced baby bellas
2 cans of whole green beans
3 cups of chicken broth
1 can of cream of mushroom soup
1/2 cans of French Fried onions
1 1/2 cups of grated cheddar cheese
1/2 tsp of salt
1/2 tsp pepper

Preheat oven to 350

Melt butter in a large skillet. Saute the onions and garlic for about 10 minutes. Add mushrooms. Saute until for another 10 minutes. While the mixtures is sautéing, boil the green beans in the chicken stock for 12 minutes. In a med bowl add the green beans, onions and mushroom mixture, 1/2 of one can of French-fried onions, salt, pepper, 1 cup of cheddar cheese, and the can of cream of mushroom soup. Fold until it's all mixed together. Pour into a 1 1/2 quart baking dish. Cook for 30 minutes. Remove from oven and add the remaining 1/2 cup of cheddar cheese and the can of French-fried onions and bake for 10 minutes longer.

I HATE green bean casserole. I LOVE this stuff. It's the only way I will eat it. Notice how if you change the word green bean to Hericot Verts (the French translation), it will make even the simplest of casseroles sound fancy!



Roasted Garlic and Greek Yogurt Mashed Potatoes

1lb of red potatoes with skins on (I am really not sure about this, I don't measure)
1/2 stick of room temp butter
1 cup of fat free greek yogurt
1 cup of heavy whipping cream
salt and pepper to taste (I use a lot of salt, I know it's bad)

Dice the potatoes in quarters. Boil until tender to a fork. Drain and add to a large mixing bowl. Add salt, pepper, garlic, and butter. Mash with a potato masher until you just have small chunks of potatoes left. Add cream and mix until creamy. I like my mashed potatoes lumpy so I do not use a hand mixer.



Balsamic Grilled Asparagus

1lb of fresh asparagus
3 tablespoons of balsamic vinegar
1 garlic clove minced
1 teaspoon of kosher salt
pepper to taste

Cut off stems of asparagus and wash. Combine all ingredients in a gallon sized ziplock bag. Put in the refrigerator for 1 hour. Place grill on medium high heat. Place asparagus on grill and cook for 5 minutes each side.



Creamy Key Lime Pie with Toasted Almonds
So, I didn't make this. Sara, my sister, brought it from Publix and boy is it good! I figured that we I would at least give you a recipe for one though. This is my favorite Key Lime Pie recipe. It's my step mom's.

Paint the Town Ruby Red


We celebrated my grandmother's 90th birthday this weekend in Arkansas! Since her name is Ruby and her birthday is February 13th I decided to go with a Ruby Red theme.

I made a candy buffet with all red and white candy. It was easy to find the candy since Valentine's day was right around the corner.

One of my best friends, Amanda, is a florist and she did all the flowers for me. I found the vases on sale for $1.50 at Michaels after Valentine's day. They were on the 70% off rack. The flowers turned out beautiful!
